The fruit contains vitamins and carbohydrates and the quark – or curd cheese – contains plenty of protein helping your body to recover quickly. The smoothie can be varied by replacing the raspberries and apple with for example blueberries and banana or any other fruit.

Cottage cheese and fruitCottage cheese frutti is a home made version of the sugar laden store bought versions. This one is sweetened with vanilla, a tsp honey and of course real fruit.
Double or triple the recipe if you like, it will keep in the fridge for a few days.

Hazelnut and cranberry bars – energy with no added sugar

Hazelnut cranberry energy barsA healthy treat, nice enough to serve with coffee, or as a snack. Completely without sugar, sweeteners and e-numbers.
These bars can be frozen and used as an emergency cake, or to bring to the gym and use as an energy refill after training.
Cooking time: 40 minutes, 20 minutes preparation and 20 minutes in the oven.

The perfect trail mix – or snack!

The perfect trailmixAfter many years of experimenting I have finally found the perfect nut mix, or trail mix. But, did I invent it myself? No, unfortunately not. I found it on a hike in the north of Sweden, at Grövelsjön in their nice restaurant.
It is so good that I always want to have a pre-mixed jar in my cupboard, ready to grab a handful for a snack or to add in my yoghurt in the morning. Here is the mix:

  • Sunflower seeds
  • Hazelnuts
  • Pumpkin seeds
  • Cashewnuts (not salted)
  • Almonds

The perfect trailmixThe measurements are done “on feeling”. A little bit more of what you like the most. Rost them in the oven without any added fat or oil until they’ve gotten a bit of colour.

Now you won’t go hungry on your next hike!
