- 400 g / 14 oz kale
- 2 tbsp olive oil
- 2 pinches salt
- Heat the oven to 200 degrees Celsius / gas mark 6 / 400 degrees Fahrenheit. Rinse 400 g / 14 oz kale. Dry the kale with tissue so it is not wet. Tear away stalks and spread out the leaves on a baking tray. Pour over 2 tbsp olive oil and stir with your hands to the oil sticks to the leaves. Sprinkle over 2 pinches salt. Put in the oven for 20 minutes.
- Take a moment to be mindful and take a mini-pause. Set a timer and count the number of breaths you are breathing, in and out before it’s time to return to cooking.
- After 10 minutes turn the leaves. They should be crispy when they are done. Ready to serve.
