Cabbage bake or cabbage pudding – a Swedish traditional dish

Vegetarisk kålpuddingThis is a traditional Swedish dish, originally made with mince beef. In this recipe quorn crumble is used instead to make it vegetarian.
Any leftovers can be kept to the next day or frozen for another day.

  • 200 ml / 1 cup cooked rice (or 70 ml / 2 1/2 oz uncooked rice)
  • 600 g / 1 1/4 lb white cabbage
  • 3 tbsp butter
  • 300 g / 11 oz quorn crumble
  • 2 tbsp honey
  • 1 yellow onion
  • 2 egg
  • 0.5 tsp salt
  • 0.5 tsp pepper

Cooking instructionsHow to

  1. Heat the oven to 200 degrees Celsius / gas mark 6 / 400 degrees Fahrenheit.
  2. Boil 70 ml / 2 1/2 oz rice in 150 ml / 2/3 cup water and a pinch salt, or according to the instructions on the package.
  3. Clean 600 g / 1 1/4 lb of white cabbage by removing the outer leaves and the stem. Shred the cabbage and fry it on medium heat in 2 tbsp butter for 5 minutes. Drizzle over 2 tbsp honey, mix it in and put the cabbage aside.
  4. Peel and chop 1 yellow onion finely. Fry it soft in 1 tbsp butter. Add 300 g / 11 oz quorn crumble and fry. If it is too dry, add a little water.
  5. Mix in the rice, a third of the cabbage, 2 egg, 0.5 tsp salt and 0.5 tsp pepper.
  6. Put half of the remaining cabbage at the bottom of an ovenproof dish. Add the mince on top and the rest of the cabbage. Bake it in the middle of the oven for 40 minutes.
  7. Take a few moments to try a calming abdominal breathing. Lay down on your back or sit on a chair. Place one hand on your chest and one on your stomach. Breathe in through your nose. Fill the stomach with air. Pause a moment and let the air out through the nose collapsing the stomach. Breathe in and out and feel the stomach raising and emptying. When you feel ready, stretch out.
  8. Serve with lingon berry sauce or cranberry sauce and boiled potatoes.
